Once again, it’s been a while since I have posted. I am starting to feel back to normal on writing. The trick now, is finding time to write. I have truly missed it. We are finally home for a while. I also started another part time job. It’s not much, but I do like the gig. Gets me a pretty hefty discount on hotels. That comes in handy when you love to travel! But here I am. Blogging and loving it. I haven’t had a lot of time to cook lately and have done zero canning. Bummer! This meal I made a week or so again. It was stinking yummy, quick, and easy I wanted to share.
I did start to blog the other night. However, once I started, I decided to make some minor updates to my website. It was all going great, making wonderful changes. Until I deleted the entire blog and website. All of it? Yes, all it! I am not very tech savvy. Clearly. Thankfully the help desk was able to restore it within a couple of days. They totally had my back. How do you delete an entire web page with a year’s worth of blog posts? I don’t actually know how, but I sure did it. Literally, if you went to the site in the last 48 hours it would have been a blank page. Completely blank, didn’t even say “error”; it was that bad.
Being short on time lately, I thought I’d use one of the delicious meal seasoning packets I ordered from my amazing friend Kim. It definitely saved me time. I didn’t have to spend time figuring out what to make for dinner. I just had to choose which yummy meal I wanted to make from my stash. Kim lives on the East Coast and is a Vikings fan. That right there makes her awesome. But that is not all there is to Kim. She is an incredible friend and even better wife and mother. She has more patience and level-headedness than most people. Kim, I adore you, my friend!

Back to the recipe. It’s quite simple. Follow the directions on the package.
Just kidding. There is more to it than that. The directions are useful though. HAHA.

I chose different veggies that the picture/directions. We are not fans of bell peppers in this house. I used carrots, mushrooms, bok choy. Green onions and sesame seeds for garnish. I simply cooked thinly sliced chicken in oil, added the veggies. Once the veggies were cooked to MY desired constancy, I tossed in a bag of coleslaw (without dressing). Next, combined and mixed in the seasoning mix (seasoning packet mixed with water and soy sauce). I tossed my noodles in, plated, and garnished with chopped green onion and sesame seeds. Boom. A quick Japanese meal that came together nicely. Thanks Kim! I will be using my other Epicure meals soon!!!
