Thanksgiving Leftovers

SO. MUCH. FOOD. We have so much food leftover from Thanksgiving. Typically, my go-to is soup. Let’s be real. Who doesn’t love soup? And you can turn virtually anything into soup. Turkey Tortilla is a good one after thanksgiving.

But damn. I’ve been feeding this crew a lot of soup lately. My husband suggested turkey tacos. Don’t have to ask me twice. Yes. His tacos are amazing. And…cha-ching! This means he is doing all the cooking. Sold.

Matt made his famous taco shells. He fries each shell until it is crunchy on the outside and a little soft still inside. These are insane! He made taco filling with turkey, onion, corn and seasoning. Then he rolled a few taquitos and fried those too. We are also having the best pizza in the world with the tacos. I am leaving you hanging on the best pizza in the world. You gotta have a reason to come back to my blog, right?

Another Thanksgiving staple, Cranberry sauce, is delicious on toast. Boom. Leftovers for breakfast.

Lunch…. Don’t fix what ain’t broke. Turkey sandwich with nothing but Mayo, salt and pepper.

I also made Arden a snack with the pie crust leftovers. I did this on Thanksgiving while I baked the pie. Came in handy for a quick snack later for the kiddo. I sprayed the cuttings with cooking spray, sprinkled cinnamon sugar on them and popped in the oven while the pie was baking. Makes for a delightful snack.
