Is this a Midwest thing? Please comment with your thoughts on that. I thought it was an everywhere thing. A few months ago I made it and mentioned it to by Oregon Bestie, and she had never heard of it. I sent her the recipe and she loved it! So maybe it is just a midwest thing–like hotdish!
I absolutely love making this with cucs straight out of my garden. My grandfather always had the absolute best garden growing up. Nowadays my mom sure has it! The cucs I used last night were from her garden. I had forgotten I even had them. Apparently keeping them in a plastic grocery bag at room temperature is a great way to preserve because they were still fresh from WEEKS ago. I remember growing up, these were something my dad made often in the summer. As an adult, I had to call him for the recipe when my son would ask me to make this.
This is another one of those recipes I don’t measure. It all depends on the size of the cucumber or if you wanna use 2 or not.
Is it just us in Minnesota (or the Midwest that makes these?
‘Straight Outta the Garden’ Creamed Cucumbers

minutesIngredients
1-2 cucumbers
Mayo or Miracle Whip
1/4 white onion, sliced.
Dill (I use a lot more than most people)
A little bit of sugar
A pinch of salt and pepper (or 3 pinches)
A splash of vinegar
Directions
- Peel and slice your cucumbers.
- In a bowl combine the rest of the ingredients.
- When well mixed, stir in your cucumbers. It will be thick and a little lumpy. That is OK.
- Refrigerate at least a couple hours.
