Steak Hoagies and Easter Guacamole!

Happy Spring! I seriously cannot believe how fast the snow is melting. And let me tell ya, it feels amazing!!! I have been wanting to blog how delicious our Easter dinner was, but it’s been too nice out to be inside on my laptop. However, time to get it done. Tomorrow morning, I am heading out on vacation, so it’s now or never to get this posted.

Our friend, the plate licker, has been bringing me random FREE groceries from work that are going to be thrown out if no one takes them. Free groceries? Here, twist my arm. Last week I said let’s do a chopped challenge with whatever he brings me. He brought me steaks, hoagies and avocado puree. Easy peasy!

I had worked the several nights prior to easter and didn’t get to the grocery store. Luckily Kwik Trip is open all night and has a small variety of groceries.

I ended up making grilled steak hoagies with a provolone/mozzarella cheese sauce; quick guac; and tuna salad. The tuna salad was just because I had all the ingredients on hand and needed a side. Holy Hell was this good! O.M.G.

For the guacamole I bought a small container of Pico de Gallo at the gas station. It had pretty much all the things I wanted to buy anyway. I added some extra garlic, garlic juice, red onion, and lime juice. It was so freaking good!

The steaks I marinated all day in simple soy sauce and Worcestershire. Then before putting on the grill I rubbed them with a mx of paprika, brown sugar, black pepper and garlic salt. While grilling the first side of those I buttered the hoagies and then tossed them on the grill also. Steaks took 3-4 minutes per side.

While the steaks were resting, I sautéed mushrooms and onions in olive oil, salt and pepper. I also made the cheese sauce. I started a rue with butter and flour. Then added a couple cups of milk. When blended nicely, I threw in a couple handfuls of shredded provolone and mozzarella. Next time I will stick to just provolone. As this was melting, I added my seasoning. Nothing special, just Red Robin’s Red seasoning.

Earlier in the day I had made tuna salad to serve as our side. I didn’t have the little shell noodles, but I did have some ziti in the pantry. That worked well actually.

Boom. Chopped Challenge complete. It was good. So good that we went to the bar, all had a shot, came home and fell right to sleep!

Plate lickers were in full effect after this meal. My husband was actually trying to eat the plate, it was that good!
