In my last blog entry I tried out the new recipe format. I really like it! Only one problem. I don’t always use measurements. The sauce I make in this post: no measurements. I just added a little of this and a little of that. Sometimes I will use the recipe card format, sometimes I won’t. Sometimes it just will not have measurements on the ingredients. It’s my blog, I can do what I want.
But, did you like that format? I am cool either way. Just trying to improve readability. I am new to this kind of thing. I had no idea there were so many “plug-ins” for blogs out there. It’s actually kind of fascinating! Up until a month ago, I didn’t even know what a website plug in was. If you don’t know, don’t ask me, as google. She is better at explaining.
A few nights ago, I was trying to decide what to make. I ultimately decided on a pork loin. I make those fairly often, at least once a month, usually more. For this one, I really wanted to make a sauce to accompany the meat. I knew I was going to make broccoli with it. I have been craving and eating a ton of broccoli lately. I also knew my guys needed more carbs than that, so I planned on mashed potatoes.
But about that sauce. I wasn’t sure what to do. I thought about buying something, then decided to instead look at what I already had. In the fridge I had some leftover blackberries to use up. That was the start and off I went with my little experiment. I contemplated using BBQ with the blackberries. I didn’t have any, instead i used the basic ingredients for BBQ sauce and jazzed it up. I basically just started tossing in ingredients and tasting until it was right.
Turns out, it was delicious! I taste a lot as I go. When it was almost perfect, and I thought to myself “It’s missing something”. And it was. The meat. It didn’t taste perfect until I tried a little bite of pork dipped into it. And then…it was just right. It just needed that pairing.
I was a little surprised my husband liked it so much. I used heat/spice to balance out the sweet, but I wasn’t sure it was enough heat for him. It was. He LOVED it!
Spicy Blackberry Honey Sauce over Pork Loin
Ingredients
Blackberries
Ketchup
Honey
Mustard
Apple cider vinegar
Worcestershire sauce
Pineapple Mango juice (or any juice)
Ginger paste
Garlic Powder
Cayenne powder
Ancho chili powder
Ground mustard
Directions
- Toss all the ingredients into a sauce pan over medium heat.
- Heat until the berries start to burst and are soften. Mix thoroughly.
- Strain sauce with mesh strainer into bowl.
- Serve over sliced pork loin
