Quick post tonight. I am back home after vacation. And boy am I glad to be back with my fam, right where I belong. I sure did miss them. And i missed blogging for you guys!
My guys were super excited to have me home. It really, really made me feel loved. They were also happy to have me back in the kitchen. My husband was working nights while I was gone, so our friend the Plate Licker was taking care of our Mini. Not only did he take amazing care of him, but he also sent food home with my hubby most nights. We are so lucky to have such a great village!
Back to tonight’s simple recipe. We have a ton of leftovers from The Plate Licker in the fridge, I wanted to use that up before I make too much more. He left a super tasty pot roast in the fridge. That was my original plan for tonight. And then he stopped after work with more Asparagus. And a crap ton of green beans (be prepared for a green bean saga coming soon). I had some bacon leftover from breakfast yesterday. Bacon wrapped asparagus sounded good. But I wanted to put my own, simple, twist on it.
I wanted chipotle seasoning but was all out. Instead, I sprinkled the bacon/asparagus with ancho chili powder and a garlic/onion mix. It was effing delicious!
It’s simply simple. Preheat oven to 400. Wrap the bacon around the asparagus. Choose whatever seasonings you want. I considered brown sugar for a candied version. But passed for spicy. I baked for 45 minutes, flipping once halfway through. Then I put under the broiler for a couple minutes on each side to crisp the bacon. Wow!
Wow. Just wow.
