Game Day Feast on the Fly

First—8 and 1 baby!!! Our Vikings pulled out another win yesterday and this feels AMAZING! SKOL

It was a pretty busy weekend. My 20-year-old moved into his own place on Saturday. Friday was spent packing and teaching him how to make Tuna Melts. One of his favorites. After we all ate, he and I had a movie night together. That one-on-one time is so incredibly special to me.

Tuna melts are so simple and CHEAP! But oh so good!

Saturday, I worked all day followed by a visit to the kid’s new pad. It was pretty darn nice actually. I am proud of him.

After that it was a trip to my hometown to see some friends from high school. A dear friend was home visiting from the UK. She moved there several years ago to be with the love of her life. It was great to see her and see her so happy! Was fun to catch up with the others as well!

In fact, my childhood bestie and I had so much fun…we decided to continue the fun the next day for the game. It was a last-minute idea.

We didn’t get home until late on Saturday night. I didn’t have time to clean the house or plan game day food. We made a quick decision on the way home to do a Baked Potato bar. It’s really a great idea when you don’t have a lot of time. And perfect for just a few people. I wasn’t having a party; it was just my friend from grade school and my husband’s buddy (The plate licker). Speaking of the Plate Licker, he did the dishes for me while I finished preparing the food. What a guy! My husband was working on our tailgate bus, trying to finish some projects before the next home game. Our day was all about those Vikings!

You can do baked potato bars, nacho bars, taco bars, sandwich bars, anything really…like this. It’s simple. It’s quick. And everyone can build exactly what they want to eat. This one worked great because I had shredded beef in the freezer from the local meat market that a friend had given me. I had pretty much all the toppings: cheese, sour cream, ranch, crispy onions, jalapenos, bacon, cilantro and BBQ. In the morning I grabbed some decent sized potatoes from the store and called it good! Plate Licker had agreed to bring some scoops chips, so I also made a quick Rotel dip. I don’t know if that is just a Minnesota thing or if everyone makes it. If so, I am happy to share my recipe with anyone that isn’t familiar. Just comment below. I add Johnny Salt to mine. It’s yummy.

Because I am me, I had to have some kind of sweet treat also. And themed. Duh. I made rice crispy bars. But with cocoa pebbles and peanut butter. Then I used a football shaped cookie cutter and some frosting to make laces. I didn’t have white frosting. I improvised and used yellow and purple. Its what I had on hand.

Poof. Game day feast on the fly. Lots of fun was had! We were louder than we have ever been (other than home games IN the stadium). We saw our Jersey friends on TV. We laughed. We almost had 6 heart attacks. We almost cried. But were able to celebrate instead. We won!

My husband Thor was the plate licker this weekend.
