Easy Weeknight Air Fryer Pork Chops

Real quick. Popping in with a quick dinner remedy for busy weeknights. It’s been busy lately. Let me rephrase. Busy is an understatement. Overwhelming is more fitting. Wow.

Nursing school is a lot. It’s so much info, so fast! And the expectations are extremely high, as they should be. So far, so good when it comes to grades. I am holding my own. Not as perfect as I would like to be, but damn close! I have had, what one of my instructors called, a successful failure. It brought me back down to earth after feeling like this wasn’t going to be too hard. I was getting perfect, or nearly perfect, on everything. Until I forgot to shake a suspension. Big No-no! However, I will never forget that again! Lesson learned.  Even though it’s going well, don’t think there hasn’t been tears. I have bawled my eyes out questioning myself and whether or not I can do this. I can. And I WILL. Yes, it’s hard. Incredibly so. But it will be worth it in the long run. I love helping people and this is going to enable me to do better and increase my personal sense of accomplishment.  It just takes a lot of time to understand everything, not just memorize.

Back to dinner. What can you do with 4 pork chops, a bag of frozen veggies and some Pasta-Roni? Put together a damn good dinner! The pork chops are finishing up while I type this.

We had stopped using our air fryer for a while now. Did you know that most air fryers have warnings about causing cancer. Yep! Check yours today. Before purchasing a new one, check the back and bottom of the box for warnings. I finally found one recently that didn’t have the warning. Bonus—it was on clearance. Now that we have a safe one to use again, I am using it all the time!

I am not going to fill out a recipe card for this. It takes too much time. And really isn’t needed.

For 4 boneless porkchops, I made a dry rub with brown sugar, ground mustard, onion powder, garlic salt and black pepper. I dried the chops, rubbed in olive oil, and then rubbed the dry mix on. I air fried them for 7 minutes, flipped and returned to air fryer for 9 more minutes, all at 400 degrees. Easy peasy!

I still needed a filling side dish for my guys. They all need extra calories in the winter. Pasta-Roni to the rescue, along with frozen veggies. I used a parmesan flavored box a cooked according to box instructions. While that was cooking, I put the veggies in the microwave, then mixed into the noodles at the end while they sat to thicken.

Now that dinner is done and gone, I better get back to homework. Enjoy the night everyone!
