I made this several weeks back. Then I lost my notes. Now I found my notes.
I feel bad on nights I work because my husband has to make dinner. He doesn’t mind, and never complains. But I like to surprise him once in a while and have an oven ready meal prepped for him. He makes me happy. It makes me happy to do this for him when I can.
This was fun to make. I was able to use some of my gadgets I love to use. In general, I love quite prep time in the kitchen.

I really love my food chopper from Tupperware. I use it for carrots and onions the most. My husband loves it for his breading for Walley Nuggets (future blog post). I use chorizo from our local meat market. It is my husband’s favorite in the area. I definitely recommend investing in the good stuff!

To make this ahead, I just made the loaves and put in fridge instead of oven. I also refrigerated the glaze when finished. Matt ended up putting the glaze on the loaves the last 15 minutes of baking. I would recommend a minute or 2 under the broiler as well. He served on mashed potatoes and took a photo for me. What a guy!

Ingredients
Meatloaf:
1 tbsp. olive oil
½ cup Chopped onions
1 medium carrot, finely chopped
1-2 ribs of celery, finely chopped
1 clove minced garlic
½ lb. chorizo
½ lb. ground beef
6 oz green chilis
Salt about a teaspoon
½ teaspoon cumin
¼ teaspoon black pepper
¼ teaspoon cayenne
2 eggs, beaten
¼ cup ketchup
¼ cup sour cream
½ cup breadcrumbs
Glaze:
2 tablespoon olive oil
2 cloves of garlic, minced
1/4 medium onion, chopped
1 cup tomato paste
¼ cup brown sugar
1 tablespoon yellow mustard
4 oz green chilis
1 can chipotle adobe sauce
Steps:

- Preheat oven to 375
- Sauté onion, carrot, celery and garlic until soft
- In large bowl combine veggies, meat an chilis.
- In separate bowl combine salt, pepper, cumin, cayenne and eggs. Add ketchup and sour cream.
- Pour into meat and veggie mix, mix in breadcrumbs.
- Once combined (I use my hands) put into loaf pan and bake for 45 minutes.
- Meanwhile make your glaze. Sauté garlic and onion, stir in the rest of the ingredients and simmer 5-6 minutes until thickened to your desired consistency.
- When the meat is finished in oven, drain the excess liquid. And let rest for a few minutes.
- Slice, spoon glaze over and serve.
