
I know, I know…. it’s been way too long since my last blog post. I apologize. New Year’s, Christmas, Football, being sick, work…and way more going on than I’d like to talk about. However, here I am.
I am back bitches!
It’s been pretty “winter” out lately. We’ve got a couple feet of snow in our yard. It sure seems as if we have had a lot more snow this season than usual. It’s been cold and icy as well. Today was weird. Everything was iced over. Buses in the metro shut down. Flights all over the country were grounded. Just weird. It made me want to make something yummy, warm and comforting.
This morning I tossed chicken in our VIKINGS crockpot, with the intentions of making a hotdish with shredded chicken. I rolled around ideas of pasta, broccoli, corn, ranch…. that wasn’t quite hitting the nail on the head.
But then…wait for it….
CHEESE! We love cheese. Yep. Something with cheese. And chicken. And yes, still pasta.
I am a sucker for BBQ Mac & Cheese.
We have been on a Seinfeld kick lately. Almost daily either my husband or I say “OMG, this is reminds e of that episode of Seinfeld. Actually, I received a Seinfeld Cookbook for Christmas from our oldest. I love it. And yes, it does have the recipe for Fusilli Jerry. That brings me to the pasta choice for tonight: Fusilli.
I boiled the pasta. Al Dente, which is important because I knew I was throwing this all in the oven at some point. Shredded the chicken and air fried some bacon.
Now for the cheese. Keep in mind, I didn’t have a recipe or much of a plan or even know exactly what I was doing. I was just doing.
Side note: I didn’t measure anything. At all. That means I can’t really type a clear recipe. However, it turned out great so I am sharing it anyway.
I threw a can of cheddar cheese soup and some heavy cream in a big sauce pan. Once whisked together I added a bag of shredded sharp cheddar cheese. As that was melting into ooey gooey goodness I added some season salt, pepper, garlic salt and mustard. I added more cream as needed and finally some parmesan. Once ready, I mixed the pasta into the cheese sauce, added bacon and a handful of chopped red onion. I put this into a baking dish, topped with breadcrumbs and stuck ‘er in the oven at 350 for like 20 minutes. Just long enough for a quick convo with the Plate Licker…although he opted not to come over for dinner. Rude. Just kidding, not rude at all. But he was missed.

Meanwhile I mixed the shredded chicken with BBQ sauce.
Once done in the oven, I topped with the BBQ chicken and some crunchy onions.
Boom. Delicious!
